Recipe: Healthy 'Reeses' Cups

Adults like Halloween candy too!! Hey, I hear you loud and clear, as I too, like to partake in enjoying all things pumpkin shaped and sweet :) But, I also know all too well some of the not so sweet ingredients that go into commercial candy. As my diet has shifted over the years from less processed to more whole foods, so has my taste. I often find that eating foods I once thought were so good actually don't taste that great! This is especially true for chocolate. Maybe I've become a chocolate snob, but I can't even eat that waxy, fake chocolate; you know the one I'm talking about!
Reese's was always my favorite candy growing up and I'm not about to end a lifelong relationship. That's why I love this easy mock version that better suits my now 'grown-up' tastes :) Don't get me wrong, these are still nice little calorie bombs, but the ingredients are way better for you! Additionally, they're super rich, so often your craving for something sweet is satisfied with just one versus the addictive nature of most commercial candies.

Healthy 'Reese's' Cups
Makes 6 servings
Ingredients
1/2 cup dark chocolate chips (I like Kroger's Simple Truth Organic 72% Cacao)
4 tsp coconut oil
2 tbsp natural peanut butter (or almond/cashew butter!)
SweetLeaf vanilla Stevia drops to taste
Instructions
Melt the chocolate chips and 2 tsp of coconut oil. Pour half the chocolate into 6 paper or silicon cupcake liners. Put in freezer for about 10 minutes to firm.
In a separate bowl, melt the other 2 tsp of coconut oil and then mix with your peanut butter and stevia drops. Spread evenly on top of hardened chocolate and put back in freezer for another 10 minutes to firm.
Pour remaining chocolate on top of peanut butter layer and, once more, put back in freezer for 30 minutes to let completely set.
Enjoy and store in the freezer or refrigerator!
